A simple recipe borrowed from Allrecipes.com and reprinted here for your convenience.
Ingredients1 (8 ounce) package angel hair pasta 2 teaspoons olive oil 1/2 cup finely chopped onion 1 clove garlic, chopped 2 1/2 cups chopped tomatoes 2 cups boneless chicken breast halves, cooked and cubed 1/4 cup chopped fresh basil 1/2 teaspoon salt 1/8 teaspoon hot pepper sauce (I make my own hot pepper sauce out of chile peppers, olive oil and garlic – you can see it in the background in the photo below) 1/4 cup Parmesan cheese
Recipe – Basil Chicken over Angel Hair Pasta
In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.
In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
Toss sauce with hot cooked angel hair pasta to coat. Serve with Parmesan cheese.
As they say in Italy – Delizioso!!
In a good tradition, a couple of closing lines. I’ve been away from this blog for a month or so, mostly fighting through heaps of snow and subzero temperatures. That doesn’t mean I didn’t cook all this time, it’s just I didn’t have a chance to post anything. Last couple of days have been somewhat of a tease, with all of that snow suddenly gone, pool across our house completely defrosted, birds flocking back from their all inclusive Caribbean destinations and some promise of inevitable spring. All of that was too good to be true – Columbus is receding back into 20’s tomorrow – but that was enough for me to get inspired for something spring-like, such as this pasta.
Enjoy and do let me know what you thought of this pasta.
Until then – stay healthy, safe and, of course, well fed. Ciao!
