A simple recipe borrowed from Allrecipes.com and reprinted here for your convenience.
Ingredients
1 (8 ounce) package angel hair pasta 2 teaspoons olive oil 1/2 cup finely chopped onionRecipe – Basil Chicken over Angel Hair Pasta
In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.
In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
Toss sauce with hot cooked angel hair pasta to coat. Serve with Parmesan cheese.

In a good tradition, a couple of closing lines. I’ve been away from this blog for a month or so, mostly fighting through heaps of snow and subzero temperatures. That doesn’t mean I didn’t cook all this time, it’s just I didn’t have a chance to post anything. Last couple of days have been somewhat of a tease, with all of that snow suddenly gone, pool across our house completely defrosted, birds flocking back from their all inclusive Caribbean destinations and some promise of inevitable spring. All of that was too good to be true – Columbus is receding back into 20’s tomorrow – but that was enough for me to get inspired for something spring-like, such as this pasta.
